This meal is healthy, full of flavor, and easy to prepare!<\/p>\n<h3>Coconut curry chicken recipe<\/h3>\n<p style=\"text-align: justify;\">Start by preparing some <strong>Jasmine rice<\/strong> to serve your chicken over.<\/p>\n<p style=\"text-align: justify;\">Cut up <strong>2 lbs<\/strong> <strong>chicken<\/strong> in bite size chunks. Season the chicken with salt and 1-2 tbsp <strong>curry powder<\/strong>. Allow to marinade for 30 min to 1 hour. (For a vegan or vegetarian recipe, substitute tofu, tempeh, or more of your favorite veggies!)<\/p>\n<h3 style=\"text-align: justify;\">Chop the following into small pieces:<\/h3>\n<p style=\"text-align: justify;\"><strong>1 bell pepper<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>\u00bc cup cilantro<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>\u00bc cup basil<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>1 jalapeno<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>2 garlic cloves<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>1 tbsp. Fresh Ginger, grated<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>Zest of 1 lime, plus juice of 1 lime<\/strong><\/p>\n<p style=\"text-align: justify;\">Saut\u00e9 in a pan on medium-high heat for 2 min. Season with salt.<\/p>\n<p style=\"text-align: justify;\">Add chicken, Saut\u00e9 just until outside looks cooked. Inside will still be raw.<\/p>\n<h3 style=\"text-align: justify;\">Add to pan:<\/h3>\n<p style=\"text-align: justify;\"><strong>1 bag of sugar snap peas<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>2 carrots<\/strong>, peeled and diced<\/p>\n<p style=\"text-align: justify;\"><strong> 1 can lite coconut milk<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>2-3 tbsp. Curry powder\u00a0<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>1 tbsp soy sauce (or tamari for a gluten free recipe)<br \/>\n<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>1 tbsp sugar<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>Salt to taste<\/strong><\/p>\n<p style=\"text-align: justify;\">Mix well then bring to a boil.
